BRUSSELS - BELGIUM - 04 August 2021 -- Le Champignon de Bruxelles located in the cellars (catacombs) of Cureghem, under the Abattoirs (slaughterhouses) of Anderlecht. They use organic waste, mainly the ingredients used to brew beer and old bread to cultivate 5 different types of mushrooms. -- Sylvère Heuzé, director for production checking in the foggy chambers on Eryngii mushroom which are still growing.
